Coconut Banana Chocolate Chip Muffins
The day I made these tasty Coconut Banana Chocolate Chip Muffins I was craving a pick-me up and brighten my mood kind of snack. I wanted something sweet, but not loaded with sugar. It had to be something that I could enjoy and I wouldn’t feel bad about sharing with my little one. She has a knack for hovering around anyone with food. She will climb all over you and hold her mouth open waiting for a bite.

I looked in my pantry and found coconut and chocolate chips. Two of my favorite flavours are coconut and chocolate and the combination is divine. To add sweetness to these Coconut Banana Chocolate Chip Muffins without overdoing it with refined sugars I decided that bananas would be a great addition. The bananas have to be VERY ripe (like yellow with lots of dark brown spots and really soft ripe!) The riper it is, the sweeter it is, and the easier it is to mash.
Now back to those flavour combinations. Banana, coconut and chocolate. Can it get any better? I mean Yum! Yum! Yummy!
These muffins smell incredible when they are baking in the oven. My husband can barely wait for them to cool down before he grabs one off the rack! I have trouble eating just one. I just love how well they pair with coffee or a nice glass of milk. I could eat one for breakfast, for a snack or even after dinner. I guess what I am saying is that they are a perfect any time of day!
Here is how to prepare these Coconut Banana Muffins:
First, whisk together both flours, baking soda, baking powder, salt and the coconut flakes.
Second, in a separate bowl whisk together the mashed bananas, sugar, egg, oil and the extracts.
Third, stir the flour mix into the wet ingredients. Next, fold in the chocolate chips, then divide the batter evenly in the muffin tin and bake.

Coconut Banana Chocolate Chip Muffins
Servings: 12 Prep: 20 mins Cook: 22 mins
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2/3 cup fine unsweetened coconut flakes + extra to sprinkle on top
- ½ tsp baking soda
- 1½ tsp baking powder
- ½ tsp salt
- 1/3 cup granulated sugar
- 1 ½ cup very ripe bananas, mashed (3 bananas)
- 1 tsp vanilla extract
- 2 tsp coconut extract
- 1 egg
- 1/3 cup olive oil (or canola oil)
- ½ cup semisweet chocolate chips
Directions
- Preheat oven to 375F. Line or grease muffin tin.
- In medium bowl whisk both flours, shredded coconut, baking soda, baking powder and salt.
- In large bowl whisk bananas, sugar, egg, oil and extracts.
- Stir the flour mixture into the wet ingredients. Fold in the chocolate chips.
- Spoon batter evenly into muffin cups then sprinkle with shredded coconut, if desired.
- Bake for 20 – 22 minutes or until golden brown.
