With baby number two arriving in just a few short weeks I feel the pressure to be better prepared with planning out meals for my family and myself.  After I had my daughter, prepared meals and eating healthy went out the door because it was just so hectic and I was SERIOUSLY sleep deprived.  This time around I want to at least TRY to do better!  In order to do so I plan to prepare make-ahead meals that can last for a few days.  This is where my Cranberry Apple Baked Oatmeal comes in. Apple Cranberry

This Cranberry Apple Baked Oatmeal takes only 15 minutes to prepare.  Which, in my book is a total win… especially since I will have my hands full with a toddler and a newborn!  Also, cranberry and apple make a fabulous flavour combo that makes me think of autumn (my Fav season!).  This baked oatmeal makes mornings a breeze.  I don’t have to put any thought into what I will be eating or what I will be serving my little lady.  All I have to do is pull it outta the fridge, warm it in the microwave and add whichever topping I’m in the mood for! Easy-Peasy makes this Mama happy!

Now, let me show you just how easy it is to prepare this Cranberry Apple Baked Oatmeal!

First, stir together the rolled oats, cinnamon, nutmeg, salt and baking soda.

Second, in another bowl whisk together the milk, egg, brown sugar, and vanilla extract.  Super easy so far, right?!

Third, stir the wet ingredients into the oat mixture, then stir in he fruit.  Evenly spread this mixture into your baking dish. Bake it.  Now you’ve got yourself a hearty make-ahead baked oatmeal!

Cranberry Apple Baked Oatmeal

Prep: 15 mins    Cook: 40 – 45 mins            Servings: 8

Ingredients

  • 2 cups rolled oats
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 cups milk
  • 1 egg
  • 1/3 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3 cups apple, peeled, cored and diced (4 apples)
  • 1 1/2 cup cranberries, fresh or frozen

Directions:

  1. Preheat the oven to 375F and line or grease an 8×8 baking dish.
  2. In a large mixing bowl combine the rolled oats, cinnamon, nutmeg, salt and baking powder.
  3. In a separate bowl whisk together the milk, egg, sugar, and vanilla extract.
  4. Next, pour this into the oat mixture and stir to combine. Add in the fruit and stir. 
  5. Transfer to the prepared baking dish and spread evenly. 
  6. Bake in the oven for 35 to 40 minutes.

Enjoy with a dollop of your favourite yogurt or drizzled with delicious maple syrup. It’s really up to you!  I love it with a splash of milk and drizzled with maple syrup. Oh so tasty!
